Pasture-Raised Ground Beef Tacos with Avocado Salsa

The ground beef is leaner, more nutrient-dense, and full of natural flavor, making it the perfect filling for tacos. Paired with a zesty avocado salsa, these tacos deliver a healthy, satisfying meal that showcases the clean taste of grass-fed beef. Ingredients:
- 1 pound Ground Beef (from PV Cattle)
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 small tortillas (corn or flour)
For the Avocado Salsa:
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 1/2 cup cherry tomatoes, quartered
- 1 jalapeño, finely chopped (optional)
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Instructions:
- Cook the Ground Beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Add chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Stir to coat the meat evenly with the spices and cook for another 2-3 minutes.
- Make the Avocado Salsa: In a bowl, combine the diced avocados, red onion, cherry tomatoes, jalapeño, lime juice, cilantro, and salt. Toss gently to combine.
- Assemble the Tacos: Warm the tortillas, then spoon the seasoned ground beef into each one. Top with a generous amount of avocado salsa. Add your favorite toppings like shredded cheese, sour cream, or hot sauce.
